From Culinary School to Tokyo: A Chef’s Journey

If you had told Brendan Cravitz—fresh out of culinary school, knife set in hand—that one day he’d be living in Japan, running a food company, and obsessing over umami, he probably would’ve laughed and gone back to making sauce.

Because even back then, sauce was his thing.

Brendan’s journey started over 25 years ago at The Culinary Institute of America (CIA). After working in restaurants, he realized the traditional chef life wasn’t for him. A pivot led him to the Navy, television production, and global marketing, where he worked on projects ranging from Jackass and Punk’d to major brand campaigns.

But food was never far from his mind.

A move to Tokyo’s Azabu neighborhood nearly a decade ago reignited his passion for food and now, Japanese cuisine. He fell in love with the depth of umami flavors, the precision of Japanese cooking, and the country’s obsession with perfecting even the simplest dishes.

That passion led to years of experimenting in the kitchen, testing batch after batch, refining flavors—until finally, Azabu Foods was born.

Many “Japanese-style” condiments are mass-produced outside Japan—but not ours. Every jar of Umami Everything is crafted in Japan, using a carefully selected blend of ingredients to achieve deep, complex umami flavor. (Learn more about our sourcing)

Our core umami-rich ingredients—including aged miso, tamari, maitake mushroom powder, kelp, and algae powder—are sourced from Japan’s finest producers, ensuring authentic depth and richness. To build bold layers of flavor, we incorporate  yuzu, sansho pepper, and red chili (ichimi togarashi), balancing savory, citrusy, and spicy notes in every bite.

By honoring Japan’s culinary traditions and focusing on high-quality, all-natural ingredients, we create a sauce that’s true to its origins—bold, balanced, and packed with umami.
